The sencha green tea is traditional tea from Japan. It has needle-like and rolled tightly due to the process of drying and steaming. This kind of tea is said to be having a flavor which is seaweed-similar to bittersweet taste. It has a green color which is not usual for those people who have been used to taking yellow, green tea that is Chinese style.

The Process of Making Sencha Tea

1. The leaves are steam-pressed for 15-45 minutes. This is done to prevent oxidation of leaves.

2. They are rolled into thin, needle-like leaves to create the thin-blade appearance of the tea.

3. Lastly, the leaves are pan-fired to improve the preservation of the dried leaves and enhance flavor.

Here are a few easy tips for brewing a perfect cup of sencha.

Brew Notes:

Color: Yellow-green

Flavor Notes: Mildly sweet and aromatic

Brew temp: Simmering (not boiling) water, about 70-77 ° C (160-170 ° C)

Brew time: 2 minutes

Brew Tips:

* Use good water. Even the best sencha cannot make bad water taste good!

* Do not pour boiling water over the tea leaves for brewing. Let it cool down a bit.

* Do not brew for too long. A couple of minutes will do.

* Do not stir, shake or mix while brewing.

Bring Water to Boil In A Kettle

Boil water in a kettle and distribute it to each cup, after it has cooled down for about 2 minutes sencha tastes best that is when brewed at 160-170° C (70-77° C)

Add Sencha Leaves To Teapot

Add the leaves to the empty teapot it is recommended that you use one teaspoonful per cup. However, the amount is adjustable depending on your taste

Add Water from cups to teapot, and brew closes the lid of the teapot. Let the tea brew for about 2 to 3 minutes. It is recommended that you should not shake or stir while brewing.
