1. What Is Anji Bai Cha?  

The tea was discovered in 1982 but can be traced back to 1041-1048 A.D during the Qing period. A legend about this green tea was recorded in a Chinese book called “Da Guan Cha Lun” pointing it out as a plant that has jade white leaves. It continued to be a legend until a single tea bush was discovered in An Ji County in China.
It has relatively short harvesting period and is not widely planted as other varieties of tea, and as such, is one of the most expensive teas particularly in China. It has a soothing and refreshing taste that has a hint of amazing orchid sweetness in its distinctive pleasant aroma. It has the freshest appearance compared to other tea as its leaves are narrow and pale greenish with a fold on its length. 

2. Making Process Of Anji Bai Cha 

Only the tender and most pure leaves of bai cha are picked. Thereafter the tea is spread in shades away from direct sunlight so as to enhance the quality of tea and make them much easier to dry. The tea is subsequently heated in a moderate heat so as to deactivate enzymes but leaves the pleasant aroma intact. After heating the tea is rolled using a hand for at least three minutes so as to form wrinkled strips. Finally, you can dry the leaves at 100 degrees for 10 minutes and thereafter spread for fifteen minutes. At this point, the tea is cooled, packed and ready for brewing.

3. How To Brew Anji Bai Cha 

For the best and incredible result, it is advisable to brew this tea at a low temperature since it's a very delicate yet so sweet a variety. You can steep the tea at around 80degrees - 175 degrees to reach a perfect infusion. The steeping time recommended for steeping should be three minutes but can be gradually adjusted to match your taste.

4. How To Store Anji Bai Cha 

In order to preserve the sweet flavor and aroma of this tea, it should be stored only when the moisture content of the dried leaves is not above 6% during processing. It should be stored in an environment with relatively low temperature such as those in ice storage room or freezer where the temperatures are as low as 5. Once packed you can store in a dry cool place.
